Summer Corn and Tomato Pasta

8 oz spaghetti or your choice of pasta

2 cups fresh corn kernels (approximately 4 ears of corn, stripped from the cob)

2 cups cherry or grape tomatoes, halved

3 cloves garlic, minced

1 medium onion, finely chopped

1/4 cup extra virgin olive oil

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 tsp red pepper flakes (adjust to your spice preference)

Salt and freshly cracked black pepper, to taste

1/2 cup grated parmesan cheese (plus additional for serving)

Juice of 1 lemon

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to the package directions until it's al dente. Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the finely chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until the garlic is fragrant.

      Add the Corn and Tomatoes: Toss the fresh corn kernels into the skillet, allowing them to sauté for about 5 minutes until they start to caramelize. Next, gently fold in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften but maintain their shape.

        Combine the Pasta and Vegetable Sauce: Add the drained spaghetti to the skillet, mixing thoroughly with the sautéed vegetables. Gradually add reserved pasta water, a little at a time, until you reach your desired sauce consistency—this will help the sauce cling to the pasta.

          Season and Incorporate Flavor: Stir in the chopped basil and freshly squeezed lemon juice, incorporating salt and cracked black pepper to taste. Finally, add the grated parmesan cheese and gently toss everything together to combine.
