1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple chunks (canned may be substituted if fresh is unavailable)

1 medium bell pepper (red or green), diced

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, finely grated

1/4 cup soy sauce (divided)

1/4 cup rice vinegar

1/4 cup ketchup

2 tablespoons brown sugar

1 tablespoon cornstarch (optional, for thickening)

1/4 cup chicken broth

2 tablespoons vegetable oil

Salt and pepper, to taste

Cooked jasmine rice or fried rice, for serving

Sesame seeds and chopped green onions, for garnish

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine the diced chicken pieces with 2 tablespoons of soy sauce, minced garlic, and grated ginger. Mix well to ensure the chicken is evenly coated. Allow the chicken to marinate for a minimum of 15 minutes to absorb the flavors.

      Prepare the Sauce:

        In a separate bowl, whisk together the remaining 2 tablespoons of soy sauce, rice vinegar, ketchup, brown sugar, and chicken broth. If you prefer a thicker sauce, stir in the cornstarch until fully dissolved. Set the sauce mixture aside for later use.

          Cook the Chicken:

            Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes, turning occasionally, until the chicken is browned and cooked through. Once done, remove the chicken from the skillet and set it aside.

              Sauté the Vegetables:

                In the same skillet used for the chicken, add the diced onions and bell peppers. Stir-fry for 3-5 minutes until the vegetables are tender-crisp. Next, add the pineapple chunks and stir for an additional minute to heat through.

                  Combine Everything:

                    Return the cooked chicken to the skillet with the sautéed vegetables. Pour the prepared sweet and sour sauce over the mixture, tossing everything together to ensure even coating. Allow the dish to simmer for 3-5 minutes, giving the sauce a chance to thicken (if cornstarch was used) and envelop the chicken and vegetables beautifully.
