Sweet Chili Glazed Chicken Stir Fry

1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons vegetable oil

2 cups mixed bell peppers (red, yellow, green), sliced into thin strips

1 cup broccoli florets, cut into bite-sized pieces

1 cup snap peas, trimmed and cleaned

1 small onion, thinly sliced

4 cloves garlic, minced

1-inch piece fresh ginger, grated

½ cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper, to taste

Cooked jasmine rice or noodles, for serving

Sesame seeds and chopped green onions, for garnish

Marinate the Chicken: In a medium bowl, mix the sliced chicken with the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Stir well to coat the chicken evenly. Allow the mixture to marinate for at least 15 minutes while you prepare your vegetables.

    Heat the Oil: In a large skillet or wok, pour the vegetable oil and heat it over medium-high heat. Wait until the oil is shimmering, indicating that it’s hot enough for cooking.
