Sweet Peach Cobbler Muffins

2 cups fresh peaches, diced (approximately 3 medium-sized peaches)

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¾ cup whole milk

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

½ cup brown sugar (for the topping)

1 teaspoon ground cinnamon (for the topping)

¼ cup rolled oats (for added texture)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper muffin liners or greasing it generously with cooking spray or butter.

    Prepare the Peaches: In a medium bowl, mix the diced peaches with the lemon juice to help brighten their flavor. Set this mixture aside for about 10 minutes, allowing the peaches to marinate while you prepare the muffin batter.

      Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until everything is evenly distributed.

        Mix Wet Ingredients: In a separate bowl, whisk together the whole milk, melted butter (ensure it's slightly cooled to avoid cooking the eggs), eggs, and vanilla extract until the mixture is smooth and well combined.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl containing the dry ingredients. Gently fold together using a spatula, being careful not to over-mix; it’s okay to leave small lumps in the batter.

            Fold in Peaches: Carefully add the marinated peaches to the batter, folding them in gently to ensure they are evenly dispersed without breaking them up.

              Prepare the Topping: In a small bowl, combine the brown sugar, ground cinnamon, and rolled oats. Mix well to create a crumbly topping.
