Ingredients

For the Pancakes:

1 cup mashed sweet potatoes (approximately 1 medium sweet potato, peeled, cooked, and cooled)

1 cup all-purpose flour (or substitute with whole wheat flour for a healthier twist)

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup milk (use dairy or non-dairy milk of your choice)

1 large egg

2 tablespoons melted butter (or coconut oil for a dairy-free version)

For the Maple Glaze:

1/2 cup powdered sugar

3 tablespoons pure maple syrup

1-2 tablespoons milk (to adjust for desired glaze consistency)

A pinch of salt

Instructions

Prepare the Sweet Potato: Peel and chop the sweet potato into even-sized chunks. Boil or steam the chunks for about 15 minutes or until they’re tender. Drain and mash until completely smooth. Measure out 1 cup of the mashed sweet potato for the pancake batter.

Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk until the mixture is thoroughly blended and there are no lumps.

Combine the Wet Ingredients: In a separate bowl, whisk together the mashed sweet potato, milk, egg, and melted butter until the mixture is smooth and uniform.

Combine Ingredients: Gently pour the sweet potato mixture into the dry ingredient bowl. Use a spatula to stir the batter until just combined. It’s important not to overmix—having a few lumps is perfectly fine!

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly coat it with oil or butter. Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, and the edges look set, roughly 3-4 minutes. Carefully flip the pancakes and continue cooking for another 2-3 minutes, or until both sides are golden brown.

Prepare the Maple Glaze: In a small bowl, whisk the powdered sugar, pure maple syrup, milk, and a pinch of salt until the glaze is smooth and reaches your preferred consistency. Adjust the milk quantity if necessary.

Serve: Stack the pancakes on plates and generously drizzle the maple glaze over them. Enjoy your sweet potato dream pancakes warm, adorned with your favorite toppings like chopped nuts, pecans, or fresh berries for an extra burst of flavor!
