1.5 lbs chicken breast, diced into bite-sized pieces

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 cup corn kernels (frozen or fresh)

1 red bell pepper, diced

1 green bell pepper, diced

1 red onion, diced

8 small corn or flour tortillas

1 cup shredded cheese (use cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: sour cream, sliced jalapeños, diced avocado

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking.

    Prepare the Chicken: In a large mixing bowl, combine the diced chicken with olive oil. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss everything together until the chicken pieces are evenly coated with the spices.

      Sheet Pan Assembly: Transfer the spiced chicken onto a large sheet pan and spread it out in an even layer. Then, scatter the corn, diced red bell pepper, green bell pepper, and red onion around and on top of the chicken.

        Bake: Place the sheet pan in the preheated oven and bake for approximately 20-25 minutes, or until the chicken is thoroughly cooked and the vegetables are tender.

          Add Cheese: Carefully remove the sheet pan from the oven. Generously sprinkle the shredded cheese over the chicken and vegetable mixture. Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbling.
