Tex-Mex Beef Enchilada Casserole

1 lb ground beef

1 small onion, finely diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn kernels, drained

1 can (10 oz) red enchilada sauce

1 can (10 oz) diced tomatoes with green chilies

12 corn tortillas

3 cups shredded cheddar cheese

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

¼ cup fresh cilantro, chopped (for garnish)

Sliced jalapeños (for garnish, optional)

Sour cream (for serving, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to prepare for baking.

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break the meat apart while cooking. Continue to cook until the beef is browned and fully cooked, about 5-7 minutes. Drain any excess grease before proceeding.

      Sauté Aromatics: Add the finely diced onion and minced garlic to the skillet with the cooked beef. Sauté the mixture until the onion becomes translucent and fragrant, which should take about 3-4 minutes.

        Combine Ingredients: To the skillet, stir in the rinsed black beans, drained corn, red enchilada sauce, diced tomatoes with green chilies, ground cumin, chili powder, smoked paprika, and a generous pinch of salt and pepper. Allow the mixture to cook for an additional 5 minutes, stirring occasionally, until everything is warmed through.

          Layer the Casserole: In a greased 9x13 inch baking dish, begin by spreading a thin layer of the beef and bean mixture on the bottom. Lay 4 corn tortillas over this mixture. Next, add another layer of the beef mixture followed by 1 cup of shredded cheddar cheese. Repeat this layering process one more time: add 4 tortillas, the remaining beef mixture, and top with the final 2 to 3 tortillas.

            Sprinkle with Cheese: Evenly distribute the remaining 2 cups of shredded cheddar cheese over the top layer of tortillas, ensuring coverage for a cheesy finish.

              Bake the Casserole: Cover the baking dish with aluminum foil. To prevent sticking, lightly spray the inside of the foil with cooking spray. Bake in the preheated oven for 25 minutes. Afterward, carefully remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and turns golden brown.

                Cool & Garnish: Once finished baking, allow the casserole to cool for 10-15 minutes to set the layers. Just before serving, garnish with freshly chopped cilantro and optional jalapeño slices for an extra kick. Serve warm with a side of sour cream for a creamy contrast.
