1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), finely chopped

2 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup corn kernels (fresh or frozen)

1 large egg, beaten

½ cup breadcrumbs (gluten-free options available)

Olive oil, for greasing the baking sheet

Optional toppings: chopped cilantro and sour cream

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a baking sheet with olive oil to prevent sticking.

    Sauté Onion and Garlic: In a large skillet, heat a splash of olive oil over medium heat. Add the finely chopped onion and sauté for approximately 3 minutes until it turns translucent. Next, add in the minced garlic and cook for an additional minute, releasing its fragrant aroma.

      Brown the Ground Turkey: Increase the heat to medium-high, then add the ground turkey to the skillet. Cook thoroughly for about 5-7 minutes, stirring regularly to break apart the meat until it is nicely browned and no longer pink.

        Incorporate Remaining Ingredients: Once the turkey is cooked, stir in the rinsed black beans, diced tomatoes with green chilies, chopped bell pepper, chili powder, cumin, smoked paprika, salt, black pepper, and corn. Mix everything together and let the mixture simmer on low for about 5 minutes, allowing the flavors to combine beautifully.

          Combine with Binders: Remove the skillet from heat and allow the turkey mixture to cool slightly. Transfer it to a mixing bowl and then add the beaten egg and breadcrumbs. Mix thoroughly until all ingredients are evenly integrated; the mixture should be moist yet able to hold its shape.
