Ingredients

4 cups seedless watermelon, cubed and frozen

1 cup coconut water

1 cup full-fat coconut milk (for rich creaminess)

2 tablespoons honey or agave syrup (adjust based on your preferred sweetness)

Juice of 1 fresh lime

Fresh mint leaves, for garnish

Lime slices, for garnish

Instructions

Prepare the Watermelon: Begin by cutting the seedless watermelon into bite-sized cubes. Spread the watermelon cubes evenly on a baking sheet and place them in the freezer. Allow them to freeze for at least 3-4 hours or until they are completely solid.

Blend the Ingredients: Once the watermelon is frozen, transfer the cubes to a high-speed blender. Add the coconut water, full-fat coconut milk, and honey or agave syrup. Squeeze the juice from the fresh lime into the blender as well.

Blend to Perfection: Blend the mixture on high speed until it achieves a smooth, slushy consistency. If the slush is too thick, pause the blender and scrape down the sides to ensure even mixing. You can also add a little more coconut water to reach your desired texture.

Taste and Adjust: After blending, taste your watermelon coconut slushie. If you’d like it sweeter, add a bit more honey or agave syrup, or if you prefer a tangier flavor, squeeze in a bit more lime juice.

Serve: Carefully pour the slushies into chilled glasses to keep them refreshing and cool.

Garnish: For an extra touch of freshness and color, garnish each glass with a few mint leaves and a slice of lime on the rim.

Enjoy: Serve immediately, either with a straw or a spoon, to savor the delightful refreshing flavors of summer!
