Ingredients
  

1 whole turkey (12-14 lbs)

2 cups fresh watermelon juice

1 cup brown sugar

1/2 cup apple cider vinegar

1/4 cup soy sauce

1 tablespoon Dijon mustard

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon smoked paprika

Salt and pepper to taste

Fresh watermelon slices (for garnish)

Fresh herbs (rosemary, thyme, or parsley for garnish)

Instructions
 

Prepare the Turkey:

    - If your turkey is frozen, make sure to thaw it in the refrigerator for several days before cooking. Once thawed, take out the neck and giblets from the cavity, and use paper towels to pat the turkey dry both inside and out. This helps achieve crispy skin during roasting.

      Make the Watermelon Glaze:

        - In a medium saucepan, combine the fresh watermelon juice, brown sugar, apple cider vinegar, soy sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

          - Heat the mixture over medium heat, stirring occasionally. Bring it to a simmer and then reduce the heat slightly. Allow it to cook for about 15-20 minutes, or until the glaze thickens to a syrup-like consistency. Remove from heat and let it cool.

            Marinate the Turkey:

              - Transfer the turkey into a large roasting pan. Pour half of the prepared watermelon glaze over the turkey, ensuring every part is evenly coated for maximum flavor. Save the remaining glaze for basting later. Cover the turkey with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or ideally overnight for the best infusion of flavors.

                Preheat the Oven:

                    Roast the Turkey:
