1 cup shredded mozzarella cheese, divided

1 large egg

2 cups marinara sauce

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a mandoline slicer or a sharp knife, carefully slice the zucchinis lengthwise into strips approximately 1/4-inch thick. Lightly sprinkle the zucchini slices with salt and lay them on paper towels for about 10 minutes to draw out excess moisture. After that, pat them dry with additional paper towels to remove any accumulated moisture.

    Make the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, the grated Parmesan, the egg, and the dried Italian herbs. Season with a generous pinch of salt and freshly ground black pepper. Mix everything together until well blended and creamy, ensuring all ingredients are evenly incorporated.

      Assemble the Rolls: In a baking dish, spread a thin layer of marinara sauce (about 1 cup) to coat the bottom.
